Hi, I’m Cora Ashby, founder of AIP Healing Kitchen and author of The Complete Hashimoto’s AIP Cookbook.

Like many people navigating Hashimoto’s, I discovered that knowing what to eat is often one of the most overwhelming parts of the journey. Between conflicting nutrition advice, endless elimination lists, and complicated recipes, it can feel nearly impossible to create a way of eating that is both supportive and sustainable.

That’s why I created AIP Healing Kitchen.

My mission is simple:

To help people with Hashimoto’s make the Autoimmune Protocol feel less overwhelming and more achievable through simple recipes, practical meal plans, and realistic guidance designed for everyday life.

Why I Created AIP Healing Kitchen

When I began researching Hashimoto’s and the Autoimmune Protocol, I noticed a common problem.

Many AIP resources were either:
